Oleaceae: The Harmony of Oil & Vinegar
We came across a shop in Santa Fe, New Mexico that truly INSPIRED us to create mouth blasting flavor combinations using uncommon, yet extraordinary variations of Olive Oils and Balsamic Vinegars.
Oleaceae (pronounced O-LE-A-C-I), or olive family, offers Olive Oils from Argentina, Australia, California, Cypress, Egypt, France, Greece, Israel, Italy, Lebanon, Mexico, Morocco, Portugal, Spain, Syria, Tunisia, and Turkey. The store displays and samples a wide selection of oils and vinegars in fustis (stainless steel containers with spigots, commonly used for this purpose). We spent several hours tantalizing our taste buds with one of the delightful and extremely knowledgeable owners, Samantha Bailey-Smith.
We love the shop and the selection and have found that combining Oleaceae’s oils, vinegars and salts have added exciting flavor profiles to many of our dishes. Try combing Blood Orange Olive Oil, Pomegranate Balsamic and fresh tangerine juice over arugula topped with pomegranate seeds and toasted pecans. Slow roast some butternut squash with Acorn Squash Seed Oil for a deeper, richer flavor. The possibilities are endless…
The store also has an outstanding selection of flavored sea salts. The Black Truffle Sea Salt is fantastic, as are their Specialty Spice Blends. A must have is a Himalayan salt platter. A salt platter can be placed directly on the grill and offers a perfect amount of pure, natural salt to any dish. It’s the perfect way to cook fresh Hawaiian fish.
