We absolutely love this dip, it is bright and bold and full of delicious Mediterranean flavors.
8 oz Feta cheese (preferably a delicate, creamy Feta)
1 Tablespoon Lemon zest
2 Tablespoons Fresh squeezed lemon juice
1 Large clove garlic
6–7 Tablespoons Olive oil + 1 T for garnish
1/2 teaspoon Thyme plus 2 sprigs for garnish
Combine all ingredients in a food processor until slightly smooth
Spoon into a serving bowl and top with 1 T of Olive oil and Thyme sprigs for garnish.
Serve with crunchy pita chips.
For a sweet twist serve with sliced fresh figs or dates along with crunchy pita crackers or chips. If you want to stick with salty, serve with some amazing Greek olives. If you have any leftover try it as a panini spread.
